Why Nixtamal?Nixtamal is the product obtained after the process of nixtamalization, and it is subsequently ground to produce masa, or soft dough. In the same way Nixtamalization transforms maize kernels into nutrient rich Nixtamal, our social enterprise is working to transform the lives of East Bakersfield residents by providing meaningful employment, and unlocking the unique talents and gifts within each individual.

Every dollar raised goes to help Children First build its first social enterprise to employ people from disadvantaged neighborhoods and provide them with valuable skills in business and culinary arts.
Nixtamal proudly partners with the Bakersfield College Culinary Arts Program and the Renegade Room to bring you a rotating assortment of unique pastries each month. The Culinary Arts program is a comprehensive lecture, lab and field training program to produce competent, entry level food service workers for career positions in Kern County and throughout the US. Students who participate in these courses gain an understanding of nutrition, production, techniques and management procedures. Upon completion of the program, students will earn either a Culinary Arts Certificate of Achievement or a Culinary Arts Associate of Science degree. Culinary Students are typically employed in restaurants, hotels, school food service, catering, bakeries or food trucks.
